rosehip jam again




chestnut risotto

Roasted, peeled, chestnuts cut into half, and warm them up on a frying pan.
then add and mix with the rice cooked yesterday

If the rice is too dry. Pour in a little water.

rosehip jam

1. clean roseships

2. cook them in water

3. sieve it and remaining dirt(skin and seeds) mix and cook with water again to get maximum of the fruits. You can repeate it 3 times.

4. Boil the roseship juice you got through strainer and mix it with sugar, lot of sugar. Boil it until the most of the water evaporate and you get the right consistance. Be careful, if you boil it too long or you put too much sugar, you will get roseship caramel instead of jam

Оливье

This salad is very good for christmas or new year

- Cook potatoes and carrots in their skins (full pot), water, salt and add a little cumin, - peel it and mix it with following ingredients (everything sliced or chopped into a small pieces)
       pickle        canned peas        hard-boiled egg        apple or pomegranate(optional)
you can also add some meat, but you dont have to
- Finally add salt, pepper and mix the whole thing with mayonnaise or tartar sauce

dumpling

Dumpligns
it is a basically a cooked bread
the dough is made out of flour, yeast, milk, egg and salt
leave it to grow for 1hour
you can mix the dough with old chopped bread if you have some
then cook it in pot with water(10min each side)

it is good as a side dish
it goes with a gravy very well

chicken soup

Soup is very good food
when you cook something in water for a long time, the water will get that taste
more things you cook more taste you have
and you can save some water aside for later and make something in it
for example rice
it will have all flavours that were used for soup

i recomend it very much but back to soup
I cooked the chicken skeleton(you can use beef bones instead) with some root vegetables(carrot, celery and parsley). I cooked it for 2-3 hours till meat on the bones get soft. At the end you put bones out.

green onion

There is a trick, how to have a fresh green onion at your home. You take normal nonion and put it on top of glas with water. Sooner or later it will start grow. Then you can cut it. And it grows again. When onion gets too exhaustet, you can change it for a new one. 
For me it works only in winter. In summer id doesn't grow. I dont know why.

It's basically a beet-root cake, probably from australia
Something between carrot cake and chocolate cake. There is a trick to cover greased pan with coco instead of flour! Then the edges are nice and crunchy instead of boring and dry.

Mango spread



Mango spread
this recipe is very special
I haven't found it on internet even I was trying.
I just saw they have it in greek shop in downtown
I made it same way as horseradish or garlic spread


  • 1 mango, peeled and grated 
  • 100g grated eidam
  • 100g cream cheese
  • some salt, black pepper and chilly powder(I've added there because I didnt know what else)


Actually the quality of this spread  depends on  the kind of cheese you are using
I recommend you to get the bryndza cheese. It is very good. In fact you can forget mango, just mix bryndza with some onion or chives....

I would dedicate my first recipie to chicken




I recomend you to buy whole chicken and then to slice it. You put chest apart(for steak) bone and skins for soup and legs, wings and back bake in owen. Then it is good to bake chicken covered with

- mustard and honey
- onion
- some other spices
- and salt

200°C - 40-50 min.
Covered to do not get it too dry, befor taking out from oven might be uncovered for a while to make bit crunchy.











I do recommend to eat chicken with vegetables. It contains lot of proteins and little fat. It is a good dish for bodybuilders.
